As vegans, reduced fresh fruits and veg are real gems for us. Today I found a really good hoard in Booths. Here is what I did with them!
Chop
First I chopped up the Okra, Mushrooms and fresh herbs…
Next I fried it, with some rapeseed oil (about a tablespoon?). Don’t let the oil get to hot, once it starts spitting it’s too hot. Once stuff is browning up nicely, add some garlic.
Fry some more, than add some water (till the bottom of the pan is covered in a little bit) and put a lid on the pan. Go and do something else for a bit, but keep checking back and adding more water. Simmer it all down till it’s mushy.
Transfer it all into a bowl, add in some seeds or ground nuts, some seasoning if you like, and mash it up.
Stir in some flour, keep adding and mixing till the mix goes all doughy. Then leave it to cool down
Prepare your buns, with salad (make sure to put spare salad in a tub in the fridge, don’t leave it in the bag).
Shape the burgers and fry hot in coconut oil.
Serve with Erdinger alcohol free vegan beer (isotonic, rich in b12) by candle-light
And there you have it – cheap, healthy, vegan. Junk food with a twist! And the best thing is… it made Joey happy!
